Tuna, it's not just for your mom's mayo based salad anymore! Here are my top tips for whipping up a meal in no time with this useful pantry staple. Make sure you only use olive oil packed jarred or tinned tuna. The water-packed variety is a disgrace to fishermen everywhere, utterly tasteless!

Pasta with tuna, olives, capers and tomatoes

This combo makes a winning last moment meal. Cook the tomatoes in some olive oil with smashed garlic cloves. Once they've cooked down add the drained capers, pitted Castelvetrano olives, tuna and a bit of flat leaf parsley. Add a bit of peperoncino flakes to spice it up a bit, if desired.

Spaghetti with tuna, arugula and tomatoes

No olives? No problem! This is what I call a "one dish wonder". You have your veg, protein and carbs all in one dish!
Tuna mousse

I love this app with crudités, grissini or bits of toast. Puree tuna, capers, lemon juice, a drop or 2 of soy sauce (umami inhancer) and olive oil. Blitz all ingredients in the food processor or blender adding just a bit of oil at the beginning. The creaminess comes when you slowly drizzle a generous amount oil into the processing ingredients. Eccolo- finito!
