3 Blender Pasta Sauces to Beat the Summer Heat

Inspiration for my summer no-cook pasta sauces comes from a newly gifted blender (thank you, Ron). Here are 3 sauces that make an easy go-to weeknight meal!

Blend these sauces to the consistency you prefer. I like mine with a little crunch to them.



Pesto Trapanese- tomato & almond pesto

Pesto Trapanese comes from the western coast Sicilian town of Trapani. Blend together a combo of:

  • grape tomatoes

  • basil

  • almonds

  • clove of garlic

  • olive oil

  • Parmigiano Reggiano

  • red chili flakes (peperoncino) & salt

Mint & pistachio pesto

This one also reminds me of dishes I have had in Sicily. The town of Bronte in eastern Sicily grows some of the best pistachios in the world due to the volcanic soils from Mount Etna.


Blend:

  • Mint leaves

  • shelled pistachios

  • Parmigiano Reggiano

  • olive oil

  • salt


Mint & pistachio pesto goes well on pasta but it also nice as a topping for fish.




Walnut & and broccoli pesto

Inspiration for this one came from Cook's Illustrated, although theirs was creamier and included yogurt and pine nuts rather than walnuts.


Blend:

  • blanched broccoli stems and most of the florets (use the same water that will later cook the pasta)

  • garlic clove (option to cook with the broccoli to mellow the kick)

  • walnuts

  • Parmigiano Reggiano

  • basil (but I think other herbs would also go nicely too)

  • olive oil

  • chili flakes (peperoncino) and salt


Beat the heat and try these pasta sauces, or make your own improvisations! I would love to hear about them.
